12 oz (340g) penne pasta

1 lb (450g) Andouille sausage, sliced

1 medium onion, diced

1 red bell pepper, diced

1 green bell pepper, diced

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes (with juices)

4 cups chicken broth

1 tbsp Cajun seasoning (adjust to taste)

1 tsp smoked paprika

1/2 tsp red pepper flakes (optional, for extra heat)

1 cup heavy cream

1 cup shredded sharp cheddar cheese

2 tbsp olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sauté the Sausage: In a large pot, heat the olive oil over medium heat. Add the sliced Andouille sausage and cook until browned, about 5-7 minutes. Remove the sausage from the pot and set aside.

    Cook the Vegetables: In the same pot, add the diced onion, red bell pepper, and green bell pepper. Sauté until the vegetables have softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute, until fragrant.

      Combine Ingredients: Add the browned sausage back to the pot along with the diced tomatoes (with juices), chicken broth, Cajun seasoning, smoked paprika, red pepper flakes (if using), salt, and pepper. Stir well to combine.

        Add the Pasta: Bring the mixture to a boil, then add the penne pasta. Stir to ensure the pasta is submerged in the broth. Reduce the heat to medium-low, cover, and simmer for about 10-12 minutes or until the pasta is cooked al dente, stirring occasionally to prevent sticking.
