1 lb fresh or store-bought gnocchi

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, with juices

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

1 cup heavy cream

Salt and pepper to taste

2 cups fresh spinach, chopped

1 cup burrata cheese, torn into pieces

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving

Instructions
 

Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the top, about 3-4 minutes. Drain and set aside.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Add Tomatoes and Seasoning: Pour in the diced tomatoes (with juices), Italian seasoning, and red pepper flakes (if using). Stir well and let it simmer for about 5 minutes.

        Cream It Up: Lower the heat, then add the heavy cream to the skillet, stirring to combine. Allow the sauce to simmer gently for another 5 minutes, until it thickens slightly. Season with salt and pepper to taste.

          Combine Gnocchi and Spinach: Add the cooked gnocchi and chopped spinach to the skillet. Toss everything together and cook for an additional 2-3 minutes until the spinach wilts and the gnocchi is heated through.

            Serve with Burrata: Remove from heat and gently fold in the torn burrata pieces, allowing them to melt slightly into the dish.
