Ingredients

1 package (10 oz) lemon-flavored pudding mix

2 cups cold milk

1 cup lemon curd

1 tbsp freshly grated lemon zest

1/2 cup granulated sugar

1 tsp vanilla extract

1 package (12 oz) pound cake, sliced into 1-inch cubes

2 cups heavy whipping cream

1/2 cup powdered sugar

Fresh berries (strawberries, blueberries, or raspberries) for topping

Mint leaves for garnish

Instructions

Prepare the Lemon Pudding: In a large mixing bowl, whisk together the lemon-flavored pudding mix and cold milk until smooth. Let it sit for about 5 minutes to thicken.

Combine with Lemon Curd: Gently fold in the lemon curd, lemon zest, granulated sugar, and vanilla extract into the pudding mixture until fully incorporated and creamy.

Whip the Cream: In a separate bowl, use an electric mixer to beat the heavy whipping cream until it starts to thicken. Gradually add the powdered sugar and continue to beat until soft peaks form.

Layer the Trifle: In a large glass trifle dish or individual serving glasses, start with a layer of pound cake cubes at the bottom. Spoon a layer of the lemon pudding mixture over the cake, followed by a layer of whipped cream.

Repeat Layers: Repeat the layers (cake, pudding, and whipped cream) until you reach the top of the dish, ending with a final layer of whipped cream.

Garnish: Top with fresh berries and a few mint leaves for garnish. Chill in the refrigerator for at least 2 hours before serving to allow the flavors to meld.

Serve: Scoop out portions of the trifle into bowls, ensuring each serving includes cake, cream, and fruit. Enjoy the zesty, refreshing taste!
