Air Fryer Lemon Parmesan Artichokes – So Crispy & Delicious!

Ingredients
  

2 large fresh artichokes

1 lemon (zested and juiced)

1/4 cup grated Parmesan cheese

1/4 cup breadcrumbs (preferably panko for extra crunch)

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Optional lemon wedges (for serving)

Instructions
 

Prepare the Artichokes: Start by rinsing the artichokes under cold water. Trim the stem to about 1-2 inches and remove the outer tough leaves using kitchen scissors. Cut the top of the artichokes off to remove the prickly tips.

    Steam the Artichokes: Fill a large pot with about an inch of water and place a steaming basket inside. Bring the water to a boil and place the artichokes in the basket, cut side up. Steam for about 15-20 minutes, or until the leaves pull off easily. Once done, let them cool slightly.

      Make the Coating: While the artichokes are cooling, in a bowl, combine the lemon zest, lemon juice, Parmesan cheese, breadcrumbs, olive oil, garlic, oregano, salt, and black pepper. Mix well until the mixture is evenly combined.

        Coat the Artichokes: Once the artichokes are cool enough to handle, gently pull the leaves apart and use a spoon to spread the breadcrumb mixture between the leaves and across the top of each artichoke.

          Air Fry the Artichokes: Preheat your air fryer to 375°F (190°C). Place the coated artichokes in the air fryer basket, cut side up. Air fry for 10-12 minutes or until the tops are golden brown and crispy.

            Garnish & Serve: Remove the artichokes from the air fryer and let them cool for a few minutes. Garnish with chopped parsley and serve with optional lemon wedges on the side for an extra burst of flavor!
