Air Fryer Spinach Feta Egg Rolls

Ingredients
  

1 cup fresh spinach, chopped

1 cup feta cheese, crumbled

1/2 cup ricotta cheese

1/4 cup cream cheese, softened

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper, to taste

10-12 egg roll wrappers

Cooking spray or olive oil

Instructions
 

Prepare the Filling: In a mixing bowl, combine the chopped spinach, feta cheese, ricotta cheese, cream cheese, minced garlic, onion powder, oregano, salt, and pepper. Mix until well incorporated and creamy.

    Wrap the Egg Rolls: Place an egg roll wrapper on a clean, flat surface with one corner facing you (like a diamond). Spoon about 2 tablespoons of the spinach and cheese mixture into the center of the wrapper. Fold the bottom corner up over the filling, then fold in the sides and roll tightly. Moisten the top corner with water to seal the egg roll. Repeat with remaining wrappers and filling.

      Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

        Air Fry the Egg Rolls: Lightly spray or brush the egg rolls with cooking spray or olive oil. Place them in the air fryer basket in a single layer, making sure they’re not overcrowded (you may need to do this in batches). Air fry for 10-12 minutes, flipping halfway through until they are golden brown and crispy.

          Serve: Remove the egg rolls from the air fryer and let them cool for a minute. Serve warm with your favorite dipping sauce, such as marinara or tzatziki.
