Air Fryer Zucchini Cheese Bombs

2 medium zucchinis, grated

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (panko for extra crunch)

1 large egg, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper, to taste

Cooking spray or olive oil spray

Marinara sauce (optional, for dipping)

Prep the Zucchini: Begin by grating the zucchinis using a box grater. Squeeze the grated zucchini in a clean kitchen towel or cheesecloth to remove as much excess moisture as possible. This step is vital to avoid sogginess.

    Mix the Filling: In a large bowl, combine the drained grated zucchini, mozzarella cheese, Parmesan cheese, breadcrumbs, beaten egg, garlic powder, onion powder, oregano, salt, and pepper. Mix the ingredients thoroughly until well combined.

      Form the Bombs: Using your hands, grab a small handful of the mixture and shape it into a firm ball, about the size of a golf ball. Place the formed bombs on a parchment-lined tray. Repeat until all the mixture is used.

        Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

          Spray and Cook: Lightly spray the air fryer basket with cooking spray. Place the zucchini cheese bombs in the basket in a single layer, being careful to avoid overcrowding. Spray the tops lightly with olive oil spray for extra crispiness.

            Air Fry: Cook the zucchini bombs in the air fryer at 400°F (200°C) for 10-12 minutes, or until they are golden brown and crispy. You may need to cook them in batches if your air fryer is small.

              Serve: Once cooked, remove the bombs from the air fryer and let them cool for a couple of minutes. Serve them warm with marinara sauce on the side for dipping if desired.
