Air Fryer Zucchini Chips

2 medium zucchinis

1 cup breadcrumbs (panko or regular)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

Optional: Cooking spray or olive oil spray for extra crispiness

Prepare the Zucchini: Wash the zucchinis thoroughly and slice them into thin rounds, about 1/4 inch thick. You want them to be uniform to ensure even cooking.

    Set Up Your Breading Station: In one bowl, whisk the eggs until well beaten. In another large bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix well to combine.

      Coat the Zucchini: Dip each zucchini slice into the beaten eggs, allowing the excess to drip off. Then place the slice in the breadcrumb mixture, ensuring both sides are coated evenly. Repeat with all the zucchini slices.

        Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 3-5 minutes.

          Arrange the Zucchini Chips: Lightly spray the air fryer basket with cooking spray to prevent sticking. Arrange the coated zucchini slices in a single layer in the basket, ensuring they are not overcrowded. You may need to cook in batches depending on the size of your air fryer.

            Air Fry the Chips: Air fry the zucchini slices for 10-12 minutes or until they are golden and crispy. Halfway through the cooking time, give the basket a shake or flip the chips for even cooking.

              Check for Crispiness: After the timer goes off, check the chips. If you prefer them crispier, add an extra 2-3 minutes of cooking time.

                Cool and Serve: Once cooked, remove the zucchini chips from the air fryer and let them cool slightly. They’ll become crispier as they cool. Serve warm with your favorite dipping sauce like marinara or ranch.
