Apple Cinnamon Breakfast Quesadillas

2 large flour tortillas

2 medium apples (Granny Smith or Honeycrisp), peeled and thinly sliced

½ teaspoon ground cinnamon

2 tablespoons brown sugar

1 tablespoon lemon juice

1 cup shredded sharp cheddar cheese (or your choice of cheese)

1 tablespoon unsalted butter

¼ cup caramel sauce (optional, for drizzling)

¼ cup chopped walnuts or pecans (optional, for added crunch)

Powdered sugar (for dusting, optional)

Instructions
 

Prepare the Apples:

    - In a mixing bowl, combine the thinly sliced apples with lemon juice, brown sugar, and ground cinnamon. Toss until the apples are well-coated. Set aside for about 10 minutes to allow the flavors to meld.

      Cook the Apples:

        - In a skillet over medium heat, melt the butter. Add the apple mixture to the skillet and sauté for about 5-7 minutes, or until the apples are tender and slightly caramelized. Remove from heat and set aside.

          Assemble the Quesadillas:

            - Lay one flour tortilla on a clean surface. Spread half of the sautéed apples evenly over the tortilla. Sprinkle half of the shredded cheese on top of the apples. If using, add a sprinkle of chopped walnuts or pecans for extra crunch.

              Top and Cook:

                - Place a second tortilla on top to form a quesadilla. Preheat the same skillet over medium heat (you can add more butter or a drizzle of oil if desired). Carefully place the quesadilla in the skillet and cook for about 3-4 minutes, or until the bottom is golden brown and the cheese begins to melt.

                  Flip and Finish:

                    - Gently flip the quesadilla with a spatula and cook the other side for another 3-4 minutes, until golden brown. Once done, remove from the skillet and allow to cool for a minute.

                      Serve:
