For the crust:

1 ½ cups almond flour

½ cup melted butter

¼ cup brown sugar

1 tsp cinnamon

For the cheesecake filling:

16 oz cream cheese, softened

¾ cup granulated sugar

2 large eggs

1 tsp vanilla extract

½ cup sour cream

1 tsp lemon juice

For the apple filling:

3 medium apples, peeled and diced (Granny Smith or Fuji)

¼ cup granulated sugar

1 tsp cinnamon

1 tsp lemon juice

For the crisp topping:

1 cup oats

½ cup brown sugar

½ cup flour

½ cup melted butter

1 tsp cinnamon

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and set aside.

    Make the Crust: In a mixing bowl, combine almond flour, melted butter, brown sugar, and cinnamon. Mix until well combined. Press the crust mixture firmly into the bottom of the prepared springform pan. Bake for 10 minutes, then remove from the oven and set aside to cool.

      Prepare the Apple Filling: In a separate bowl, toss the diced apples with granulated sugar, cinnamon, and lemon juice. Allow the mixture to sit for about 10 minutes while you prepare the cheesecake filling.

        Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add sugar and mix well until combined. Add the eggs, one at a time, mixing after each addition. Stir in the vanilla extract, sour cream, and lemon juice until the mixture is creamy and smooth.

          Layer the Cheesecake Components: Pour half of the cheesecake mixture into the crust, followed by a layer of the apple filling. Pour the remaining cheesecake mixture on top, ensuring all the apple filling is covered.
