For the Birria Stew:

2 lbs beef chuck roast, cut into large chunks

1 lb lamb shanks, cut into pieces

5 dried guajillo chilies

3 dried ancho chilies

2 dried pasilla chilies

4 cloves garlic, minced

1 medium onion, chopped

1 tsp cumin seeds

1 tsp oregano

1 tsp black pepper

1 tsp cinnamon

4 cups beef broth

2 tbsp apple cider vinegar

Salt to taste

For Serving:

Corn tortillas

Chopped onion

Chopped cilantro

Lime wedges

Salsa (optional)

Instructions
 

Prepare the Chilies:

    - Start by removing the stems and seeds from the guajillo, ancho, and pasilla chilies. Lightly toast them in a skillet over medium heat for about 2-3 minutes until fragrant. Then, soak them in hot water for about 15 minutes until softened.

      Make the Sauce:

        - In a blender, combine the soaked chilies, minced garlic, cumin seeds, oregano, black pepper, cinnamon, apple cider vinegar, and a pinch of salt. Blend until smooth, adding a bit of the soaking water if needed to achieve a sauce-like consistency.

          Cook the Meat:

            - In a large pot or Dutch oven, heat a few tablespoons of oil over medium-high heat. Add the chopped onion and sauté until translucent. Add the beef chuck roast and lamb shanks, browning them on all sides.

              Combine Ingredients:

                - Pour the chili sauce over the browned meat, then add the beef broth. Bring the stew to a boil, then reduce the heat to low, cover, and let simmer for about 3 hours, or until the meat is tender and easily shreds with a fork.

                  Shred the Meat:

                    - Once cooked, remove the meat from the pot and shred it using two forks. Return the shredded meat to the pot, stirring it back into the hearty broth. Adjust salt to taste.
