Ingredients
  

2 lbs beef chuck roast

1 tablespoon olive oil

1 medium onion, diced

4 cloves garlic, minced

1 jalapeño, diced (seeds removed for less heat)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

1 teaspoon oregano

1 teaspoon kosher salt

1/2 teaspoon black pepper

1 cup beef broth

Juice of 2 limes

Corn tortillas

Fresh cilantro, chopped, for garnish

Diced onions, for garnish

Slices of lime, for serving

Instructions
 

Sear the Beef: In a large skillet over medium-high heat, add olive oil. Once hot, sear the beef chuck roast on all sides until browned (about 3-4 minutes per side). This step adds depth of flavor.

    Prepare the Crock Pot: Place the diced onion, minced garlic, and diced jalapeño at the bottom of the Crock Pot. These will add a great base flavor.

      Combine Spices: In a small bowl, mix together the cumin, smoked paprika, chili powder, oregano, salt, and black pepper.

        Add the Roast: Place the seared beef chuck roast on top of the onion and jalapeño mixture in the Crock Pot. Sprinkle the spice mix evenly over the roast.

          Add Liquids: Pour the beef broth and lime juice over the meat. The liquid will help to keep the roast moist and flavorful as it cooks.

            Cook: Cover and set the Crock Pot to low heat for 8 hours or high heat for 4 hours, until the meat is tender and easily shreddable.

              Shred the Meat: Once cooking is complete, remove the roast and shred it using two forks. Return the shredded meat to the Crock Pot, mixing it well with the juices.

                Warm the Tortillas: In a skillet or directly over a gas flame, warm the corn tortillas for about 30 seconds on each side until pliable.

                  Assemble Tacos: Spoon a generous amount of the shredded beef onto each tortilla. Top with chopped cilantro and diced onions.

                    Serve: Serve immediately with lime wedges on the side and enjoy your authentic street tacos!
