2 cups cooked chicken, shredded or diced (can use rotisserie chicken)

1 ripe avocado, mashed

1/4 cup Greek yogurt (or mayonnaise, for a richer taste)

1 tablespoon Dijon mustard

1 tablespoon lime juice (freshly squeezed)

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup cilantro, chopped

Salt and pepper to taste

Optional: 1/4 cup diced cucumber or bell pepper for added crunch

Instructions
 

In a large mixing bowl, combine the mashed avocado, Greek yogurt, Dijon mustard, and lime juice. Mix until well combined and creamy.

    Add the shredded or diced chicken to the bowl and gently fold it into the avocado mixture until well coated.

      Stir in the cherry tomatoes, red onion, and cilantro. If using, add the cucumber or bell pepper for an extra crunch.

        Season with salt and pepper to taste. Adjust the lime juice or mustard per your preference.

          Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to let the flavors meld.

            Serve chilled on a bed of greens, in a sandwich, or in lettuce wraps for a refreshing meal.
