1 ½ cups all-purpose flour

1 cup rolled oats

½ cup brown sugar, packed

½ cup granulated sugar

2 tsp baking powder

1 tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ cup unsweetened applesauce

2 large eggs

½ cup milk (or non-dairy alternative)

½ cup vegetable oil (or melted coconut oil)

1 tsp vanilla extract

1 cup chopped apples (peeled and diced)

½ cup walnuts or pecans, chopped (optional)

½ cup chocolate chips or raisins (optional)

Instructions
 

Preheat the oven: Begin by preheating your oven to 350°F (175°C). Line a muffin tin with paper liners or grease with oil.

    Mix dry ingredients: In a large mixing bowl, whisk together the flour, oats, brown sugar, granulated sugar, baking powder, baking soda, salt, and cinnamon until well combined.

      Combine wet ingredients: In a separate bowl, mix the applesauce, eggs, milk, oil, and vanilla extract. Whisk until smooth and all ingredients are thoroughly combined.

        Blend wet and dry: Pour the wet ingredients into the dry ingredient bowl. Gently fold the mixture together using a spatula, mixing just until combined. Be careful not to overmix!

          Add fruits and nuts: Gently fold in the diced apples, walnuts or pecans if using, and chocolate chips or raisins for extra sweetness.

            Fill muffins: Spoon the batter into the prepared muffin tin, filling each cup about ¾ full to allow for rising during baking.

              Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
