Baked Apple Cider Donuts

2 cups apple cider

1 tablespoon unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground allspice

1/4 teaspoon salt

3/4 cup granulated sugar

1/4 cup brown sugar, packed

Cinnamon-sugar mixture for coating (1/4 cup granulated sugar + 1 tablespoon ground cinnamon)

Instructions
 

Preheat the oven to 350°F (175°C) and grease a donut pan with non-stick spray or butter.

    Simmer the apple cider. In a medium saucepan over medium heat, bring the apple cider to a boil. Reduce the heat and let it simmer until it reduces to about 1 cup, which should take around 15-20 minutes. Remove from heat and let cool slightly.

      Mix wet ingredients. In a large mixing bowl, whisk together the melted butter, egg, vanilla extract, and the reduced apple cider until smooth.

        Incorporate dry ingredients. In a separate bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, allspice, salt, granulated sugar, and brown sugar. Whisk to combine.

          Combine wet and dry mixtures. Gradually add the dry ingredient mixture to the wet mixture, stirring until just combined. Do not overmix; a few lumps are okay.

            Fill the donut pan. Using a piping bag or a zip-top bag with the corner cut off, pipe the batter into the prepared donut pan, filling each cavity about 2/3 full.

              Bake the donuts. Place the pan in the preheated oven and bake for 12-15 minutes, or until the donuts spring back when touched and a toothpick inserted into the center comes out clean.

                Cool and coat. Allow the donuts to cool in the pan for about 5 minutes before transferring them to a wire rack. While the donuts are still warm, roll them in the cinnamon-sugar mixture to coat.

                  Serve. Enjoy these delicious baked apple cider donuts warm or at room temperature with a cup of your favorite beverage!
