Ingredients

4 salmon fillets (about 6 oz each)

1 lb fresh asparagus, trimmed

3 tablespoons olive oil

2 tablespoons Cajun seasoning (store-bought or homemade)

1 lemon (zested and juiced)

3 cloves garlic, minced

Salt and pepper, to taste

Fresh parsley, finely chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.

Prepare the Seasoning: In a small bowl, combine the Cajun seasoning, minced garlic, lemon zest, and 2 tablespoons of olive oil. Mix until it forms a paste-like consistency.

Season the Salmon: Pat the salmon fillets dry with a paper towel. Season each fillet on both sides with salt and pepper. Then, spread a generous amount of the Cajun seasoning mixture over the top of each fillet, ensuring they are well coated.

Prep the Asparagus: In a separate bowl, toss the trimmed asparagus with the remaining tablespoon of olive oil, lemon juice, salt, and pepper until evenly coated.

Arrange on Baking Sheet: Place the seasoned salmon fillets on one side of the prepared baking sheet. Arrange the asparagus on the other side in a single layer.

Bake: Place the baking sheet in the preheated oven and bake for about 15-20 minutes, or until the salmon flakes easily with a fork and the asparagus is tender-crisp. Cooking time may vary based on the thickness of the salmon fillets.

Garnish and Serve: Once cooked, remove the baking sheet from the oven. Garnish the salmon and asparagus with freshly chopped parsley and an extra squeeze of lemon, if desired.

Enjoy: Serve the Cajun salmon and asparagus warm, either on a platter or individual plates. It pairs wonderfully with rice, quinoa, or a fresh side salad.
