4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1/2 cup feta cheese, crumbled

1/2 cup cream cheese, softened

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup sun-dried tomatoes, chopped (optional)

1/4 cup grated Parmesan cheese (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Filling: In a medium bowl, combine the chopped spinach, feta cheese, cream cheese, minced garlic, olive oil, dried oregano, salt, and black pepper. If you’re using sun-dried tomatoes, fold them into the mixture as well. Mix until well combined and creamy.

      Prepare the Chicken: Place the chicken breasts on a clean cutting board. Use a sharp knife to slice a pocket into each chicken breast, being careful not to cut all the way through. The pockets should be large enough to hold a generous amount of filling.

        Stuff the Chicken: Spoon the spinach and feta filling into each chicken pocket, dividing the stuffing evenly among the breasts. Secure the openings with toothpicks if desired, and place the stuffed chicken breasts in a greased baking dish.

          Add Toppings: Sprinkle the grated Parmesan cheese over the stuffed chicken breasts for an extra layer of flavor and a nice golden crust during baking.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and continue to bake for an additional 15-20 minutes or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the cheese is bubbly and golden.

              Serve: Remove from the oven, let it rest for 5 minutes, then garnish with freshly chopped parsley before serving.
