1 block (about 7 oz) of feta cheese

4 large eggs

1 cup cherry tomatoes, halved

2 tablespoons olive oil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

Freshly cracked black pepper, to taste

Fresh parsley or basil, for garnish

Crusty bread or pita, for serving

Instructions
 

Preheat your oven to 400°F (200°C).

    In a medium-sized oven-safe baking dish, place the block of feta cheese in the center. Surround it with the halved cherry tomatoes.

      Drizzle the olive oil over the feta and tomatoes, ensuring everything is lightly coated.

        Sprinkle the dried oregano, red pepper flakes (if using), and a generous amount of freshly cracked black pepper over the top.

          Bake in the preheated oven for about 20 minutes, or until the feta is soft and the tomatoes are blistered.

            Carefully remove the baking dish from the oven. With a spoon, make four small wells in the mixture and crack an egg into each well.

              Return the dish to the oven and bake for an additional 10-12 minutes, or until the egg whites are set but the yolks are still slightly runny (adjust the timing according to your preferred level of doneness).

                Carefully remove from the oven and let cool for a minute. Garnish with chopped fresh parsley or basil, if desired.

                  Serve warm with crusty bread or pita for dipping into the delicious baked feta and egg mixture. Enjoy your savory breakfast delight!
