Ingredients
  

200g pasta (penne or fusilli)

200g block of feta cheese

2 cups cherry tomatoes

3 cloves garlic, minced

1/4 cup extra virgin olive oil

1 tsp dried oregano

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese for serving (optional)

Instructions
 

Preheat the oven to 400°F (200°C).

    In a large oven-safe baking dish, combine the cherry tomatoes, minced garlic, olive oil, dried oregano, red pepper flakes (if using), salt, and pepper. Mix well to coat the tomatoes.

      Place the block of feta cheese in the center of the tomato mixture, ensuring there’s space around it.

        Bake in the preheated oven for about 30 minutes, or until the tomatoes are bursting and the feta is soft and slightly golden.

          While the feta and tomatoes are baking, cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.

            Once the baking is done, remove the dish from the oven. Using a fork, mash the baked feta and tomatoes together to create a creamy sauce.

              Add the drained pasta to the baking dish and toss until the pasta is well-coated with the sauce. Adjust seasoning with additional salt and pepper if necessary.

                Garnish with fresh basil leaves and sprinkle grated Parmesan cheese over the top, if desired.
