Baked Feta Potatoes

4 large russet potatoes

200g feta cheese, crumbled

4 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and black pepper, to taste

1 cup cherry tomatoes, halved

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Potatoes: Wash the potatoes thoroughly and pierce them several times with a fork. Rub with a tablespoon of olive oil, then sprinkle with salt and pepper. Wrap each potato in aluminum foil and place them directly on the oven rack.

      Bake Potatoes: Bake the potatoes for about 45-50 minutes, or until they are tender. Check the doneness by inserting a fork; it should slide in easily.

        Prepare Topping: While the potatoes are baking, in a medium bowl, mix the crumbled feta cheese, minced garlic, oregano, thyme, and the remaining olive oil. Season with salt and pepper to taste. Set aside.

          Add Tomatoes: After the potatoes have baked for about 30 minutes, toss the halved cherry tomatoes with a drizzle of olive oil, salt, and pepper in a separate bowl. Place them on a baking sheet.

            Combine and Bake: Once the potatoes are cooked, carefully unwrap them from the foil. Make a lengthwise slit in each potato without cutting all the way through. Gently fluff the insides with a fork. Stuff each potato with the feta mixture, then top with the seasoned cherry tomatoes.

              Final Bake: Return the stuffed potatoes and tomatoes to the oven. Bake for an additional 10-15 minutes until the feta cheese is slightly golden and the tomatoes are roasted.

                Serve: Remove from the oven, garnish with freshly chopped parsley, and serve each potato with lemon wedges on the side to squeeze over for added brightness.
