Baked Macaroni and Cheese

8 oz elbow macaroni

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

3 cups whole milk

1/4 cup unsalted butter

1/4 cup all-purpose flour

1 tsp Dijon mustard

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

Salt and pepper to taste

1 cup breadcrumbs (preferably panko)

2 tbsp chopped fresh parsley (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 3-quart baking dish with butter or non-stick spray.

    Cook the Pasta: In a large pot of boiling salted water, cook the elbow macaroni according to the package instructions until al dente, about 6-8 minutes. Drain and set aside.

      Make the Cheese Sauce:

        - In a medium saucepan over medium heat, melt the butter.

          - Once melted, whisk in the flour and cook for about 2 minutes, stirring continuously until bubbly and golden.

            - Slowly pour in the whole milk while whisking to prevent lumps. Continue to whisk until the mixture thickens, about 5 minutes.

              - Stir in the Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and pepper.

                - Remove from heat and gradually add the cheddar, mozzarella, and Parmesan cheeses, stirring until melted and smooth.

                  Combine Pasta and Sauce: In a large bowl, combine the cooked macaroni with the cheese sauce. Mix well until all pasta is coated.

                    Prepare for Baking:

                      - Pour the macaroni and cheese mixture into the prepared baking dish.

                        - In a small bowl, mix the breadcrumbs with a little melted butter and sprinkle over the top of the macaroni and cheese for a crunchy topping.

                          Bake: Bake in the preheated oven for 25-30 minutes or until the top is golden brown and bubbly.

                            Garnish & Serve: Remove from the oven and let cool for a few minutes. Garnish with chopped fresh parsley before serving.
