4 large Russet potatoes, scrubbed and pricked with a fork

6 cups chicken or vegetable broth

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1/2 cup sour cream

1/2 cup chopped green onions (plus extra for garnish)

1/2 cup cooked bacon, crumbled (optional)

1/4 cup milk (optional for desired consistency)

4 tablespoons unsalted butter

1/4 cup all-purpose flour

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon onion powder

Bake the Potatoes: Preheat the oven to 400°F (200°C). Place the cleaned and pricked potatoes directly on the oven rack and bake for about 45-60 minutes, or until tender. Allow them to cool slightly before handling.

    Prepare the Base: In a large pot over medium heat, melt the butter. Once melted, whisk in the flour to create a roux. Cook for about 2 minutes, stirring constantly, until the mixture turns a light golden color.

      Add Broth: Gradually whisk in the chicken or vegetable broth, ensuring there are no lumps. Bring the mixture to a simmer and cook for about 5 minutes, or until it thickens slightly.

        Mash the Potatoes: Scoop the cooled potatoes out of their skins and place them in a bowl. Mash the potatoes with a fork until slightly chunky (you want some texture). Add them to the simmering broth.

          Incorporate Cream and Seasoning: Stir in the heavy cream, garlic powder, onion powder, and shredded cheddar cheese. Mix well until the cheese melts completely. If the soup is too thick, add milk gradually until the desired consistency is achieved.

            Finish with Garnishes: Stir in the sour cream and half of the chopped green onions. Season with salt and pepper to taste. Heat through, making sure not to boil.
