Ingredients

1 pound large shrimp, peeled and deveined

1 cup breadcrumbs (preferably seasoned or panko)

1/2 cup cream cheese, softened

1/4 cup grated Parmesan cheese

1/4 cup mayonnaise

1/4 cup diced red bell pepper

1/4 cup diced green onions

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 teaspoon Old Bay seasoning

1/2 teaspoon paprika

Salt and pepper, to taste

1 tablespoon lemon juice

1 cup shredded cheddar cheese (for topping)

Cooking spray or butter for greasing

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13-inch casserole dish with cooking spray or butter.

Prepare the Shrimp: In a medium bowl, create the stuffing mixture by combining the breadcrumbs, cream cheese, Parmesan cheese, mayonnaise, red bell pepper, green onions, minced garlic, parsley, Old Bay seasoning, paprika, lemon juice, salt, and pepper. Mix well until all ingredients are evenly incorporated.

Stuff the Shrimp: Take each peeled and deveined shrimp and carefully stuff them with about 1 tablespoon of the prepared stuffing mixture. Arrange the stuffed shrimp in the greased casserole dish in a single layer.

Add Cheese Topping: Once all the shrimp are stuffed and arranged, sprinkle the shredded cheddar cheese evenly over the top for a melty finish.

Bake: Cover the casserole dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and continue to bake for an additional 10-15 minutes, or until the shrimp are cooked through, and the cheese is bubbly and golden brown.

Serve: Remove the casserole from the oven and let it rest for a couple of minutes before serving. Garnish with extra chopped parsley if desired. Enjoy the baked stuffed shrimp casserole warm and serve with lemon wedges for an extra zest!
