4 salmon fillets (approximately 6 oz each)

1/4 cup balsamic vinegar

2 tablespoons honey

1 tablespoon Dijon mustard

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Prepare the Marinade: In a medium bowl, whisk together balsamic vinegar, honey, Dijon mustard, minced garlic, dried oregano, salt, and black pepper until well combined.

    Marinate the Salmon: Place the salmon fillets in a shallow dish and pour the marinade over them, ensuring they're well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for a more intense flavor.

      Preheat the Grill or Oven: If grilling, preheat to medium heat. If baking, preheat your oven to 400°F (200°C).

        Cook the Salmon:

          - Grilling: Remove the salmon from the marinade (reserving the marinade for later). Grill each fillet skin-side down for about 6-8 minutes per side, basting with the reserved marinade halfway through cooking.

            - Baking: Place salmon on a lined baking sheet, skin-side down. Brush with a little olive oil and bake for about 12-15 minutes, basting with the reserved marinade halfway through.

              Thicken the Marinade (Optional): While the salmon is cooking, pour the reserved marinade into a small saucepan. Bring to a boil over medium heat, then reduce to a simmer and cook for about 5 minutes or until it thickens slightly.

                Serve: Once cooked, remove the salmon from heat. Drizzle with the thickened balsamic glaze and garnish with fresh parsley. Serve with lemon wedges on the side for an extra zest.
