Ingredients

1 French baguette, sliced into 1/2 inch rounds

2 cups cherry tomatoes, halved

2 tablespoons olive oil

2 tablespoons balsamic vinegar

1 teaspoon honey (or maple syrup for a vegan option)

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 cup fresh basil leaves, chopped

1 clove garlic, minced

1/2 cup fresh mozzarella balls, halved (optional)

Balsamic glaze for drizzling (store-bought or homemade)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Baguette: Arrange the sliced baguette on a baking sheet. Brush one side of each slice with olive oil. Bake in the preheated oven for about 5-7 minutes or until golden brown and crispy. Keep an eye on them to avoid burning.

Make the Tomato Mixture: In a medium bowl, combine the halved cherry tomatoes, balsamic vinegar, honey, salt, black pepper, minced garlic, and chopped basil. Toss everything gently to coat the tomatoes evenly and allow them to marinate for at least 10 minutes.

Assemble Crostini: Once the baguette slices are ready and slightly cooled, remove them from the oven. If using mozzarella, place a half on each slice. Top with the marinated tomato mixture, ensuring some of the juices accompany each piece for flavor.

Final Touch: Drizzle balsamic glaze over the assembled crostini for an extra layer of flavor.

Serve: Arrange the crostini on a serving platter and enjoy immediately while the bread is still warm and crispy.
