2 ripe bananas, mashed

1/2 cup unsweetened applesauce

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1/2 cup melted coconut oil (or unsalted butter)

2 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup cocoa powder

1/2 cup chocolate chips (optional)

1/2 cup walnuts or pecans, chopped (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease or line an 8x8 inch baking pan with parchment paper for easy removal of the brownies.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, applesauce, brown sugar, and granulated sugar. Stir until smooth.

      Add Fat & Eggs: Pour in the melted coconut oil and mix well. Then add the eggs one at a time, blending well after each addition. Finally, stir in the vanilla extract.

        Combine Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, salt, and cocoa powder until well combined.

          Combine Mixtures: Gradually add the dry ingredients to the wet mixture, folding gently with a spatula until just combined. Be careful not to overmix.

            Add Mix-ins: If using, fold in the chocolate chips and nuts until evenly distributed.

              Pour & Bake: Pour the brownie batter into the prepared baking pan, spreading it evenly. Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted into the center comes out clean with a few moist crumbs attached.

                Cool & Serve: Once baked, remove from the oven and let the brownies cool in the pan for about 10 minutes. Transfer to a wire rack to cool completely before cutting into squares.
