Banana Cinnamon Rolls

2 ripe bananas, mashed

1/2 cup warm milk (about 110°F)

1/4 cup granulated sugar

2 1/4 teaspoons active dry yeast (1 packet)

1/4 cup unsalted butter, melted

1 large egg

3 cups all-purpose flour

1 teaspoon salt

1 tablespoon ground cinnamon

1/2 cup brown sugar

1/4 cup chopped walnuts (optional)

1/2 cup cream cheese, softened (for frosting)

1 cup powdered sugar

1 teaspoon vanilla extract

1-2 tablespoons milk (for frosting consistency)

Instructions
 

In a small bowl, combine warm milk and granulated sugar. Sprinkle yeast on top and let it sit for about 5-10 minutes until bubbly and frothy.

    In a large mixing bowl, combine the mashed bananas, melted butter, and egg. Mix well until smooth.

      Pour the yeast mixture into the banana mixture and combine.

        Gradually add the flour and salt to the wet ingredients, mixing until a dough begins to form.

          On a floured surface, knead the dough for about 5-7 minutes until smooth and elastic.

            Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

              Once risen, punch down the dough and roll it out on a floured surface into a rectangle (about 1/4 inch thick).

                Brush the rolled dough with melted butter and sprinkle with the brown sugar, cinnamon, and chopped walnuts (if using).

                  Starting from one long side, tightly roll the dough into a log. Pinch the seams to seal.

                    Cut the log into 1-inch sections and place them cut-side up into a greased baking dish.

                      Cover the dish with a cloth and let the rolls rise for another 30 minutes.

                        Preheat the oven to 350°F (175°C).

                          Bake the cinnamon rolls for 25-30 minutes or until golden brown.

                            While the rolls are baking, prepare the cream cheese frosting by mixing the softened cream cheese, powdered sugar, vanilla extract, and enough milk to reach desired consistency.

                              Once the rolls are done baking, let them cool slightly before drizzling or spreading the cream cheese frosting on top.
