1/2 cup plain yogurt or applesauce

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup chopped nuts (walnuts or pecans optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a muffin tin with paper liners or spray with non-stick cooking spray.

    Prepare the Wet Ingredients: In a large mixing bowl, combine the mashed bananas, yogurt (or applesauce), honey (or maple syrup), eggs, and vanilla extract. Mix well until all the ingredients are fully incorporated.

      Mix the Dry Ingredients: In another bowl, combine the rolled oats, flour, brown sugar, baking powder, baking soda, cinnamon, and salt. Stir to mix the dry ingredients evenly.
