1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour

½ cup cornstarch

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

1/4 teaspoon black pepper

1 cup sparkling water (or any carbonated water)

Oil for frying (canola or vegetable)

½ cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spice preference)

2 green onions, thinly sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Cauliflower:

    Begin by washing and cutting the cauliflower into bite-sized florets. Pat them dry with a kitchen towel to ensure they fry well without excess moisture.

      Make the Batter:

        In a large mixing bowl, whisk together the flour, cornstarch, garlic powder, onion powder, smoked paprika, salt, and black pepper. Gradually add the sparkling water and mix until the batter is smooth and well combined.

          Heat the Oil:

            Pour enough oil into a large frying pan to come about 1 inch up the sides, and heat it over medium-high heat until it reaches 350°F (175°C). To test if the oil is ready, drop a small amount of batter into the oil; it should sizzle and rise to the surface.

              Coat the Cauliflower:

                Dip each cauliflower floret into the batter, ensuring it is fully coated. Allow any excess batter to drip off.

                  Fry the Cauliflower:

                    Carefully place the battered florets into the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 3-4 minutes or until golden brown and crispy, flipping halfway through. Once done, transfer them to a paper towel-lined plate to drain excess oil.
