Ingredients

10 chicken drumsticks

1/2 cup maple syrup

1/4 cup apple cider vinegar

1/4 cup soy sauce

2 tablespoons olive oil

3 cloves garlic, minced

2 teaspoons smoked paprika

1 teaspoon cayenne pepper (adjust based on heat preference)

1 teaspoon black pepper

1 teaspoon salt

1 teaspoon onion powder

1 teaspoon dried thyme

Fresh parsley, chopped (for garnish)

Instructions

Marinate the Chicken: In a large bowl, whisk together the maple syrup, apple cider vinegar, soy sauce, olive oil, minced garlic, smoked paprika, cayenne pepper, black pepper, salt, onion powder, and dried thyme until well combined. Add the chicken drumsticks to the bowl and toss until they are thoroughly coated in the marinade. Cover and refrigerate for at least 2 hours, preferably overnight.

Preheat the Grill: Preheat your grill to medium heat (about 350°F / 175°C). If using a charcoal grill, set up both direct and indirect heat zones.

Prepare the Grill Grates: Lightly oil the grill grates to prevent sticking.

Grill the Drumsticks: Remove the drumsticks from the marinade, letting any excess drip off. Place them on the grill over direct heat. Grill for about 10-15 minutes, turning occasionally until they are golden brown.

Move to Indirect Heat: After the initial grilling, move the drumsticks to the indirect heat zone of the grill. Close the lid and cook for an additional 15-20 minutes or until the internal temperature reaches 165°F (75°C) and the juices run clear.

Baste: During the last 5 minutes of cooking, take the reserved marinade (if desired, bring it to a boil for food safety) and baste the drumsticks for a glossy finish.

Rest and Serve: Once cooked, remove the drumsticks from the grill and let them rest for about 5 minutes. Garnish with freshly chopped parsley before serving.

Enjoy: Serve hot with your favorite sides like coleslaw, cornbread, or grilled vegetables!
