BBQ Chicken Flatbread Pizza

Ingredients
  

2 flatbreads (store-bought or homemade)

1 cup cooked chicken, shredded

1/2 cup BBQ sauce (your choice, sweet or spicy)

1 cup shredded mozzarella cheese

1/2 cup red onion, thinly sliced

1/4 cup cilantro, chopped

1/2 cup corn (frozen or fresh)

1 tsp olive oil

Salt and pepper to taste

Optional: sliced jalapeños for some heat

Instructions
 

Preheat your oven to 425°F (220°C).

    In a mixing bowl, combine the shredded chicken and BBQ sauce, mixing well until the chicken is fully coated.

      On a baking sheet lined with parchment paper, lay out the flatbreads. Brush them lightly with olive oil and season with a pinch of salt and pepper.

        Spoon the BBQ chicken mixture evenly over each flatbread.

          Sprinkle the shredded mozzarella cheese generously on top of the chicken.

            Add the thinly sliced red onion and corn evenly over the cheese.

              If you like it spicy, scatter some sliced jalapeños on top.

                Bake in the preheated oven for 12-15 minutes, or until the cheese is bubbling and the edges of the flatbread are golden brown.

                  Remove from the oven and let it cool for a minute.

                    Finish with a sprinkle of fresh cilantro on top before slicing and serving.
