2 cups cooked shredded chicken

1/2 cup BBQ sauce (your favorite brand)

4 slices of sourdough bread

8 slices of cheddar cheese

1/4 cup red onion, thinly sliced

1 tablespoon butter

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

In a bowl, combine the shredded chicken and BBQ sauce until the chicken is evenly coated. Season with salt and pepper to taste.

    Heat a large skillet over medium heat and add the olive oil.

      Assemble the sandwiches: Place 2 slices of sourdough bread on a clean surface. On each slice, layer 2 slices of cheddar cheese, followed by a generous scoop of the BBQ chicken mixture, a few rings of red onion, and finally top with another 2 slices of cheddar cheese. Finish each sandwich with the remaining slices of sourdough bread.

        Once the skillet is hot, add half the butter and let it melt. Carefully place one of the assembled sandwiches in the skillet. Cook for about 3-4 minutes or until the bread is golden brown and the cheese begins to melt.

          Carefully flip the sandwich with a spatula, adding the remaining butter to the skillet before placing the second side down. Cook for an additional 3-4 minutes until golden brown and crispy, and the cheese is fully melted.

            Repeat the process with the second sandwich.

              Once cooked, remove from the skillet, cut in half, and garnish with fresh cilantro if desired. Serve immediately while hot and enjoy your delicious BBQ Chicken Grilled Cheese!
