Ingredients

2 cups cooked shredded chicken (preferably rotisserie)

1 cup BBQ sauce (your favorite brand)

4 large flour tortillas

2 cups shredded cheese (cheddar or a blend works well)

1/2 cup diced red onion

1/2 cup corn (canned or frozen, thawed)

1/4 cup fresh cilantro, chopped

1 tablespoon olive oil

Sour cream (for serving)

Sliced jalapeños (for optional heat)

Avocado slices (for garnish)

Instructions

Prepare BBQ Chicken: In a bowl, combine the shredded chicken and BBQ sauce, mixing thoroughly until the chicken is well-coated. Set aside.

Preheat the Skillet: Heat a large skillet or griddle over medium heat. Add a drizzle of olive oil to coat the surface.

      Layer Your Quesadilla Stacks:

        - Place one tortilla in the skillet.

          - Spread a layer of the BBQ chicken mixture evenly over the tortilla.

            - Sprinkle a generous amount of shredded cheese on top followed by a portion of diced red onions and corn.

              - Top with another tortilla and press down lightly.

Cook: Cook the quesadilla stack for about 3-4 minutes or until the bottom tortilla is golden brown and the cheese is starting to melt. Carefully flip the stack and cook for another 3-4 minutes on the other side until melted and crispy.

Repeat: Remove the cooked quesadilla stack from the skillet and slice into wedges. Repeat the process with the remaining tortillas and filling until all ingredients are used.

Serve: Arrange the quesadilla stacks on a platter. Garnish with fresh cilantro, avocado slices, and jalapeños if desired. Serve with sour cream on the side for dipping.

Enjoy: Dive into the smoky layers of BBQ goodness and enjoy the perfect blend of flavors with every bite!
