BBQ Chicken Stuffed Sweet Potatoes

4 medium sweet potatoes

2 cups cooked shredded chicken (rotisserie chicken works great)

1 cup BBQ sauce (your favorite kind)

1 cup corn kernels (fresh or canned)

1/2 cup black beans, rinsed and drained

1/2 cup shredded cheddar cheese

1/4 cup Greek yogurt or sour cream (for topping)

1/4 cup chopped green onions (for garnish)

1 tablespoon olive oil

Salt and pepper to taste

Optional: jalapeños, cilantro, or avocado for added flavor

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare Sweet Potatoes: Wash the sweet potatoes thoroughly and pierce each one several times with a fork. Place them on a baking sheet lined with parchment paper. Rub the skins with olive oil and sprinkle with a pinch of salt.

      Bake Sweet Potatoes: Bake the sweet potatoes in the preheated oven for about 45-50 minutes, or until they are tender and easily pierced with a fork.

        Combine Chicken and BBQ: While the sweet potatoes are baking, in a medium bowl, mix the shredded chicken with the BBQ sauce until well coated. Add corn kernels and black beans to the chicken mixture, and stir to combine. Season with salt and pepper to taste.
