Ingredients

2 large sweet potatoes, peeled and diced

1 pound boneless, skinless chicken breasts

1 cup BBQ sauce (your choice of flavor)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup corn (fresh or frozen)

1 cup black beans, drained and rinsed

1 avocado, sliced

¼ cup fresh cilantro, chopped (for garnish)

1 lime, cut into wedges (for serving)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare Sweet Potatoes: In a large bowl, toss the diced sweet potatoes with olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Spread them evenly on a baking sheet and roast in the oven for about 25-30 minutes, or until tender and lightly browned, stirring halfway through.

Cook Chicken: While the sweet potatoes are roasting, heat a skillet over medium-high heat. Season the chicken breasts with salt and pepper. Add the chicken to the hot skillet and cook for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center.

Add BBQ Sauce: Once the chicken is cooked, pour the BBQ sauce over the chicken in the skillet. Reduce heat to low and let it simmer for 5 minutes, ensuring the chicken is well-coated.

Assemble the Bowl: In each serving bowl, layer roasted sweet potatoes, a portion of BBQ chicken sliced into strips, corn, and black beans.

Garnish and Serve: Top each bowl with sliced avocado and a sprinkle of fresh cilantro. Serve with lime wedges on the side for an extra burst of flavor.

Enjoy: Dig in and enjoy your hearty BBQ Chicken Sweet Potato Bowls!
