Ingredients
  

1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch cubes

1 cup fresh pineapple, cut into 1-inch chunks

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

½ red onion, cut into 1-inch pieces

1 cup BBQ sauce (store-bought or homemade)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes)

Instructions
 

Marinade the Chicken:

    - In a large bowl, combine the chicken cubes, BBQ sauce (reserve ¼ cup for basting), olive oil, garlic powder, smoked paprika, salt, and pepper. Mix well until the chicken is evenly coated. Cover and marinate in the refrigerator for at least 30 minutes or up to 2 hours for maximum flavor.

      Prepare the Skewers:

        - Once marinated, take the skewers and start assembling your skewers. Alternate threading the chicken, pineapple chunks, red and green bell peppers, and red onion pieces. Aim for about 3-4 pieces of chicken and 1-2 of each vegetable/fruit per skewer.

          Preheat the Grill:

            - Heat your grill to medium-high heat (about 400°F/200°C). If you’re using a grill pan, lightly grease it and heat it on the stove over medium-high.

              Grill the Skewers:

                - Place the assembled skewers on the grill. Cook for about 10-12 minutes, turning occasionally and brushing with the reserved BBQ sauce, until the chicken is cooked through and has nice grill marks (internal temperature should reach 165°F/74°C).

                  Serve:

                    - Once cooked, remove the skewers from the grill and let them rest for 5 minutes. Serve warm over a bed of rice or alongside a fresh garden salad, drizzling extra BBQ sauce over the top if desired.
