1 lb ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 can (15 oz) diced tomatoes

1 can (8 oz) tomato sauce

1 cup beef broth

1 tsp Italian seasoning

1 tsp paprika

Salt and pepper, to taste

8 oz uncooked elbow macaroni

1 cup sour cream

1 cup cottage cheese

2 cups shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat Your Oven: Preheat the oven to 350°F (175°C).

    Cook the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, about 5-7 minutes. Drain excess fat.

      Add Aromatics: Stir in the chopped onion and minced garlic. Sauté for 3-4 minutes, until the onions are translucent.

        Combine Ingredients: Add the diced tomatoes, tomato sauce, beef broth, Italian seasoning, paprika, salt, and pepper to the skillet. Bring the mixture to a simmer and let it cook for about 10 minutes.

          Cook the Pasta: While the sauce simmers, bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

            Mix it Up: In a large bowl, combine the cooked beef mixture, drained macaroni, sour cream, and cottage cheese. Mix until everything is well incorporated.

              Layer the Casserole: In a greased 9x13 inch baking dish, spread half of the beef and pasta mixture. Sprinkle half of the mozzarella cheese on top. Add the remaining beef mixture and top with the rest of the mozzarella and Parmesan cheese.

                Bake: Cover with aluminum foil and bake in the preheated oven for 20 minutes. Then remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

                  Garnish and Serve: Remove the casserole from the oven, let it sit for 5-10 minutes, then garnish with freshly chopped parsley. Serve hot.
