1 cup coarse cornmeal

4 cups water

1 cup milk

1 cup shredded sharp cheddar cheese

1 lb large shrimp, peeled and deveined

4 slices bacon, diced

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper, diced (preferably green)

2 tsp Cajun seasoning

1 tsp smoked paprika

½ tsp cayenne pepper (adjust to taste)

1 tbsp Worcestershire sauce

2 green onions, sliced (for garnish)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Grits: In a large pot, bring 4 cups of water to a boil. Slowly whisk in the cornmeal, stirring continuously to avoid lumps. Reduce heat to low and cook for about 20-25 minutes, stirring occasionally.

    Add Milk and Cheese: Once the grits are thickened, stir in the milk, shredded cheddar cheese, and season with salt and pepper to taste. Keep warm on low heat.

      Cook the Bacon: In a large skillet over medium heat, cook the diced bacon until crispy. Remove with a slotted spoon and set aside, leaving the bacon grease in the skillet.

        Sauté the Vegetables: In the same skillet with the bacon grease, add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and diced bell pepper, cooking for an additional 2-3 minutes.

          Add the Shrimp: Stir in the Cajun seasoning, smoked paprika, cayenne pepper, and Worcestershire sauce. Add the shrimp, cooking until they turn pink and are cooked through, about 3-4 minutes. Season with salt and pepper to taste.

            Serve: Spoon the creamy grits into a bowl, top with the shrimp mixture, and garnish with crispy bacon, sliced green onions, and chopped parsley. Serve warm.
