8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tbsp olive oil

4 cloves garlic, minced

1 medium onion, finely chopped

1 cup cherry tomatoes, halved

1 cup fresh spinach, packed

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tsp Italian seasoning

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh basil, for garnish

Cook the Fettuccine: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Sauté the Shrimp: In a large skillet, heat the olive oil over medium-high heat. Add the shrimp and season with salt and pepper. Cook for about 2-3 minutes on each side until they turn pink and are cooked through. Remove the shrimp from the skillet and set them aside.

      Prepare the Sauce: In the same skillet, add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes.

        Add Tomatoes and Spinach: Stir in the cherry tomatoes and cook for another 2 minutes until they start to soften. Add the spinach and cook until wilted.

          Create the Creamy Base: Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese, Italian seasoning, and red pepper flakes if using. Allow the sauce to thicken slightly for about 3-4 minutes.

            Combine Pasta and Shrimp: Toss the cooked fettuccine and shrimp into the sauce, mixing well. If the sauce is too thick, use the reserved pasta water to reach your desired consistency.

              Serve: Taste and adjust seasoning if necessary. Serve immediately, garnished with fresh basil and additional Parmesan cheese if desired.
