2 cups all-purpose flour

1/2 teaspoon salt

1/2 teaspoon baking powder

3 tablespoons lard or vegetable shortening (or unsalted butter)

3/4 cup warm water (adjust as needed)

Instructions
 

In a large mixing bowl, combine the flour, salt, and baking powder. Mix well.

    Add the lard (or shortening/butter) to the dry ingredients. Using your fingers or a pastry cutter, mix until the mixture resembles coarse crumbs.

      Gradually add the warm water, mixing with your hands until a soft dough forms. If the dough is too sticky, add a little more flour; if it's too dry, add a bit more water.

        Knead the dough on a floured surface for about 5 minutes until smooth and elastic.

          Divide the dough into 8-10 equal pieces and roll each piece into a ball. Cover with a damp cloth or plastic wrap and let rest for at least 30 minutes (this helps it to relax for easier rolling).

            After resting, heat a cast-iron skillet or non-stick pan over medium-high heat.

              While the skillet is heating, take one dough ball and flatten it slightly. Roll it out on a lightly floured surface into a circle approximately 8-10 inches in diameter.

                Place the rolled-out tortilla in the hot skillet. Cook for about 30 seconds until bubbles form on the surface, then flip and cook for another 30 seconds on the other side.

                  Remove the tortilla from the skillet and wrap it in a clean kitchen towel to keep warm. Repeat with the remaining dough balls.

                    Serve warm with your favorite fillings or toppings!
