4 chicken thighs (bone-in, skin-on)

1/4 cup honey

2 tablespoons Dijon mustard

2 tablespoons soy sauce

3 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon apple cider vinegar

1 teaspoon paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Prepare the Marinade: In a mixing bowl, combine honey, Dijon mustard, soy sauce, minced garlic, olive oil, apple cider vinegar, paprika, salt, and pepper. Whisk until well blended.

    Marinate the Chicken: Place the chicken thighs in a large resealable bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, or overnight for maximum flavor.

      Preheat the Oven: Preheat your oven to 375°F (190°C).

        Bake the Chicken: Remove the chicken from the marinade, reserving the marinade for later. Arrange the chicken thighs in a baking dish. Bake for about 35-40 minutes or until the internal temperature reaches 165°F (75°C) and the skin is crispy.

          Make the Sauce: While the chicken is baking, pour the reserved marinade into a small saucepan. Bring it to a boil, then reduce the heat and simmer for about 5 minutes until slightly thickened.

            Glaze the Chicken: Remove the chicken from the oven about 5 minutes before it's done. Brush the thickened marinade over the chicken and return it to the oven for another 5 minutes to caramelize.

              Serve: Once done, remove the chicken from the oven and let it rest for a few minutes. Plate the chicken and drizzle with any remaining sauce. Garnish with chopped parsley.
