2 cups cooked pasta (penne or fusilli)

2 grilled chicken breasts, sliced

1 tablespoon olive oil

2 tablespoons honey

1 teaspoon black pepper

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

1 red bell pepper, sliced

1 cup fresh spinach

1/2 cup mozzarella cheese, shredded

Salt to taste

4 slices of sourdough bread

1 tablespoon butter (for grilling)

Prepare the Chicken: In a medium bowl, mix together honey, black pepper, garlic powder, smoked paprika, and a pinch of salt. Add the sliced chicken breasts and coat them evenly with the marinade. Let it sit for about 15 minutes to absorb the flavors.

    Cook the Vegetables: In a large skillet, heat olive oil over medium heat. Add the sliced red bell pepper and sauté for 3-4 minutes until they become tender. Stir in the spinach and cook until wilted. Remove from the skillet and set aside.

      Combine Ingredients: In the same skillet, add the marinated chicken slices and cook for 5-6 minutes until fully cooked and caramelized. Once cooked, mix in the sautéed bell peppers and spinach with the pasta. Toss in the mozzarella cheese, allowing it to melt slightly.

        Assemble the Panini: Preheat a panini press or a grill pan over medium heat. Butter one side of each slice of sourdough bread. On the unbuttered side, layer the chicken pasta mixture generously. Top with another slice of bread (buttered side out).

          Grill the Panini: Place the sandwich in the panini press or grill pan. If using a grill pan, press down the sandwich with a spatula. Cook for 4-5 minutes until the bread is golden and crisp, and the cheese is melted. Flip halfway through cooking to ensure even browning.

            Serve: Remove the panini from the press, let it rest for a minute, then cut in half. Serve immediately with a side of mixed greens or a light salad for a complete meal.
