Ingredients
  

4 large russet potatoes

1 lb (450g) flank steak or sirloin, thinly sliced

1 tablespoon olive oil

1 medium onion, diced

1 green bell pepper, diced

1 cup shredded cheddar cheese (or cheese of your choice)

1/2 cup sour cream

1/4 cup chopped green onions

Salt and black pepper to taste

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon Worcestershire sauce

Optional: hot sauce or steak sauce for serving

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Bake the Potatoes: Scrub the russet potatoes under cold running water. Pat them dry with a towel. Prick each potato several times with a fork, then rub with olive oil and sprinkle with salt. Place them directly on the oven rack and bake for about 45-60 minutes, or until tender. You can check doneness by inserting a fork into the largest potato.

      Prepare the Steak: While the potatoes are baking, heat the olive oil in a large skillet over medium-high heat. Add the diced onion and bell pepper, cooking for about 5 minutes until softened. Season with salt, pepper, garlic powder, and smoked paprika.

        Cook the Steak: Add the sliced steak to the skillet and pour in the Worcestershire sauce. Cook for about 3-5 minutes, stirring occasionally, until the steak is cooked to your desired doneness. Remove from heat and set aside.

          Assemble the Potatoes: Once the potatoes are done baking, remove them from the oven. Let them cool for a few minutes before handling. Cut each potato in half lengthwise, carefully scoop out a bit of the flesh (you can save this for mashed potatoes later), and fluff the insides with a fork.

            Load the Potatoes: Divide the steak and veggie mixture among the potato halves. Top generously with shredded cheddar cheese. Return them to the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.

              Add Toppings: Remove from the oven and allow them to cool slightly. Garnish with sour cream, chopped green onions, and additional hot sauce or steak sauce if desired.
