Ingredients

1 pound large shrimp, peeled and deveined

3 tablespoons olive oil

2 tablespoons fresh lemon juice

2 tablespoons fresh lime juice

4 cloves garlic, minced

1 teaspoon paprika

1 teaspoon ground cumin

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon red pepper flakes (optional, for heat)

2 tablespoons fresh parsley, chopped

Zest of 1 lemon

Zest of 1 lime

Instructions

Prepare the Marinade: In a medium mixing bowl, combine the olive oil, lemon juice, lime juice, minced garlic, paprika, cumin, salt, black pepper, and red pepper flakes (if using). Whisk until well combined.

Marinate the Shrimp: Add the peeled and deveined shrimp to the marinade. Toss gently to ensure all the shrimp are coated. Cover the bowl with plastic wrap or transfer to a resealable plastic bag. Refrigerate for at least 30 minutes and up to 2 hours to allow the flavors to meld.

Preheat the Grill: Preheat your grill to medium-high heat. If using skewers, soak wooden skewers in water for about 30 minutes to prevent burning.

Skewer the Shrimp: Remove the shrimp from the marinade, allowing any excess liquid to drip off. If grilling on skewers, thread the shrimp onto the skewers, about 4-5 per skewer.

Grill the Shrimp: Place the skewers on the grill and cook for 2-3 minutes on each side, or until the shrimp are opaque and just cooked through. Avoid overcooking, as shrimp can become tough.

Garnish and Serve: Once cooked, remove the shrimp from the grill. Transfer to a serving platter and sprinkle with fresh parsley and the citrus zests. Serve immediately, perhaps with a side of grilled veggies or a fresh salad!
