1 (15 oz) can black beans, drained and rinsed

1 (15 oz) can sweet corn, drained

1 small red onion, diced

2 cloves garlic, minced

1 packet taco seasoning

1 (10 oz) can diced tomatoes with green chilies

3 cups tortilla chips, crushed

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

½ cup sliced jalapeños (fresh or pickled, according to your spice preference)

1 cup sour cream

½ cup fresh cilantro, chopped (for garnish)

Optional toppings: sliced avocados, chopped green onions, additional jalapeños

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Meat: In a large skillet over medium heat, brown the ground beef, breaking it apart as it cooks. Once browned, drain excess fat if necessary.

      Add the Flavors: Stir in the diced onion and minced garlic. Cook for about 3-4 minutes, until onion is translucent. Add taco seasoning, black beans, corn, and can of diced tomatoes with green chilies. Mix well and let cook for an additional 2-3 minutes, allowing the flavors to meld.

        Layer the Casserole: In a large baking dish, start by spreading half of the crushed tortilla chips on the bottom. Then layer half of the meat mixture, followed by half of the shredded cheddar and Monterey Jack cheese. Repeat the layers with the remaining tortilla chips, meat mixture, and top with the rest of the cheese. Sprinkle sliced jalapeños on top.

          Bake It Up: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
