1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

16 oz cream cheese, softened

2/3 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 cup fresh strawberries, pureed

½ cup sour cream

Preheat Oven: Preheat your oven to 325°F (160°C). Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.

    Make the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and ¼ cup sugar. Mix until the crumbs are evenly coated. Press this mixture firmly into the bottom of the prepared baking dish.

      Bake the Crust: Bake the crust in the preheated oven for about 10 minutes. Remove and let it cool slightly.

        Prepare the Cheesecake Filling: In a large bowl, beat the softened cream cheese with 2/3 cup sugar until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream until well combined.

          Add Strawberry Puree: Gently fold the strawberry puree into the cheesecake mixture, reserving a small amount for drizzling on top later if desired.
