6 large eggs

1/2 cup cottage cheese

1/2 cup shredded sharp cheddar cheese

1/4 cup diced bell peppers (any color)

1/4 cup diced cooked bacon or cooked sausage (optional)

2 tablespoons chopped fresh spinach (optional)

1/4 teaspoon onion powder

1/4 teaspoon garlic powder

Salt and pepper, to taste

Cooking spray or olive oil, for greasing

Preheat the Oven: Preheat your oven to 325°F (163°C) and prepare a muffin tin by greasing it with cooking spray or olive oil. If using silicone molds, ensure they're clean and dry.

    Blend the Eggs: In a mixing bowl, whisk together the eggs until well combined.

      Blend in Cottage Cheese: Add the cottage cheese to the eggs and blend until smooth. You can use an immersion blender for a creamy texture or a regular blender.

        Add Seasonings: Stir in the onion powder, garlic powder, salt, and pepper. Mix well to incorporate all flavor elements evenly.

          Mix in Add-ins: Fold in the shredded cheddar cheese, diced bell peppers, and any optional ingredients like bacon or spinach. Make sure everything is evenly distributed.
