2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup unsalted butter, cold and diced

3/4 cup buttermilk

For the Chorizo Gravy:

1 pound chorizo sausage (preferably Mexican style)

1/4 cup all-purpose flour

2 cups whole milk

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Chopped fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Make the Biscuits:

      - In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.

        - Use a pastry cutter or your fingers to cut in the cold diced butter until the mixture resembles coarse crumbs.

          - Pour in the buttermilk and stir gently until just combined; do not overmix.

            - Turn the dough out onto a lightly floured surface, folding it over a few times to create layers (about 3-4 folds).

              - Roll or pat the dough to about 1-inch thickness, then cut out rounds using a biscuit cutter or a glass.

                  Prepare the Chorizo Gravy:

                    - In a large skillet over medium heat, crumble the chorizo and cook until browned and cooked through, about 5-7 minutes. Remove the chorizo and set aside, leaving the grease in the skillet.

                      - Sprinkle the flour over the chorizo grease in the skillet, stirring constantly for about 1-2 minutes to form a roux.

                        - Gradually whisk in the whole milk, ensuring there are no lumps. Bring the mixture to a simmer, stirring frequently until thickened, about 5-7 minutes.

                          - Stir in the cooked chorizo, garlic powder, smoked paprika, salt, and pepper to taste. Adjust seasoning as needed.

                            Serve:

                              - Split the warm biscuits in half and ladle the chorizo gravy generously over the top. Garnish with fresh parsley if desired.
