500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons black pepper, freshly ground

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

3 tablespoons vegetable oil

4 cloves garlic, minced

1-inch piece ginger, minced

1 medium onion, sliced

1 bell pepper (any color), sliced

2 green onions, chopped

1 teaspoon sesame oil

½ teaspoon salt

A pinch of sugar

Fresh coriander for garnish (optional)

Instructions
 

In a mixing bowl, combine the chicken pieces with black pepper, soy sauce, oyster sauce, cornstarch, and salt. Mix well and let it marinate for at least 30 minutes to allow the flavors to infuse.

    Heat a large skillet or wok over medium-high heat and add the vegetable oil. Once hot, add the marinated chicken to the pan. Spread it out in a single layer and let it sear for about 3-4 minutes without stirring.

      After searing, stir the chicken and cook for another 4-5 minutes until it's golden brown and cooked through. Remove the chicken from the skillet and set it aside.

        In the same skillet, add a bit more oil if needed, and sauté the minced garlic, ginger, and sliced onion for about 2 minutes until fragrant.

          Add the sliced bell pepper to the skillet and stir-fry for an additional 2-3 minutes until the peppers are tender yet crisp.

            Return the cooked chicken to the skillet along with any juices that may have accumulated. Pour in the sesame oil, and sprinkle a pinch of sugar over, then toss everything together to coat well.

              Finally, stir in the chopped green onions and mix for another minute. Remove from heat.

                Serve the black pepper chicken hot, garnished with fresh coriander if desired, alongside steamed rice or your favorite noodles.
