Ingredients

For the Blackened Fish:

1 lb white fish fillets (such as tilapia, snapper, or cod)

2 tablespoons paprika

1 tablespoon cayenne pepper

1 teaspoon dried oregano

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon thyme

Salt and pepper to taste

2 tablespoons olive oil

For the Chipotle-Lime Sauce:

1/2 cup sour cream or Greek yogurt

1-2 chipotle peppers in adobo sauce (adjust for spice preference)

1 tablespoon lime juice

1 teaspoon lime zest

1/4 teaspoon cumin

Salt to taste

For Assembling the Tacos:

8 small corn or flour tortillas

2 cups shredded cabbage (green, purple, or a mix)

1 avocado, sliced

Fresh cilantro leaves for garnish

Lime wedges, for serving

Instructions

Prepare the Chipotle-Lime Sauce:

    - In a bowl, combine the sour cream (or Greek yogurt), chipotle peppers, lime juice, lime zest, cumin, and salt. Use a blender or food processor to mix until smooth. Adjust the seasoning as needed. Set aside in the fridge to let the flavors meld.

      Make the Blackened Fish:

        - Pat the fish fillets dry with paper towels and season both sides with salt and pepper.

          - In a small bowl, mix together paprika, cayenne pepper, oregano, garlic powder, onion powder, and thyme. Rub this spice mix generously over both sides of the fish fillets.

            - Heat olive oil in a skillet over medium-high heat until hot. Carefully add the fish fillets and cook for about 2-3 minutes on each side, or until they are cooked through and have a crispy, blackened coating. Remove from heat and let rest for a minute.

              Prepare the Tacos:

                - Warm the tortillas in a dry skillet or microwave until pliable.

                  - To assemble, layer a generous amount of shredded cabbage on each tortilla, followed by pieces of the blackened fish.

                    - Top with slices of avocado and drizzle with the chipotle-lime sauce. Add fresh cilantro leaves for garnish.

                      Serve:

                        - Serve the tacos immediately with lime wedges on the side for extra flavor. Enjoy your vibrant, spicy blackened fish tacos!
