Ingredients

For the Blackened Tilapia:

4 tilapia fillets (6 ounces each)

2 tablespoons olive oil

1 tablespoon paprika

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon dried thyme

1/2 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

Juice of 1 lime

For the Mango Salsa:

1 ripe mango, diced

1/2 red bell pepper, finely chopped

1 small red onion, finely chopped

1 jalapeño, seeds removed and finely chopped (optional, for heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Instructions

Prepare the Blackened Seasoning: In a small bowl, combine paprika, cayenne, garlic powder, onion powder, thyme, oregano, salt, and black pepper. Mix until well combined.

Prep the Tilapia: Pat the tilapia fillets dry with a paper towel. Brush each fillet with olive oil, ensuring they are evenly coated. Sprinkle the blackened seasoning generously over both sides of the fillets. Let them sit for about 10 minutes to absorb the flavors.

Make the Mango Salsa: In a medium bowl, combine the diced mango, chopped red bell pepper, red onion, jalapeño (if using), and cilantro. Squeeze the lime juice over the mixture and season with salt and pepper to taste. Toss gently to combine. Set aside to allow the flavors to meld.

Cook the Tilapia: Heat a large skillet over medium-high heat. Once hot, add the seasoned tilapia fillets, cooking for about 3-4 minutes per side or until the fish is opaque and flakes easily with a fork. If necessary, work in batches to avoid overcrowding the pan.

Serve: Place each blackened tilapia fillet on a plate and generously top with the fresh mango salsa. Serve with lime wedges on the side for an extra zing.

Garnish (optional): For an added touch, sprinkle additional cilantro and a few slices of lime on the plate.
